Lets just take a second and give thanks-- these are like a homemade cake without all the hassle. 

There is something so glorious about creating a mouthwatering dessert without even having to turn on your oven.

These decadent little bites are so CAKEY and carrot-cake "like" I have had one of them night for a straight week (just to be sure they were as good as I remembered ) and I still cant get over it.

Personal opinion but the Cashew Icing take them to a whole other level of fabulous. Cant wait to see how much you love them!

D r y   I n g r e d i e n t s 
3/4 cup + 2 tbsp blanched almond flour
1/3 cup coconut flour
1/2 cup walnuts ( all nuts unsalted)
1/2 cup pecans
1/4 cup pistachios
1 tbsp flax meal

W e t  I n g r e d i e n t s 
12 dates (soaked in hot water for 10 minutes)
2 tbsp cashew butter
2 tsp vanilla
1 tbsp warm water

S p i c e s 
2 tsp cinnamon
1/4 tsp nutmeg
1/8 tsp ground ginger
1/4 tsp salt 1/4 tsp salt.

O t h e r 
1/4 cup finely grated carrot ( about 1 large carrot )
toppers: coconut shreds , extra grated carrot .

D i r e c t i o n s 
Soak your dates in hot water for 10 minutes. While soaking add all your dry ingredients + spices into food processor. Process all until it becomes a breadcrumb/course flour! Pour into a separate bowl and set aside. Drain and de-pit your dates. Add to food processor and pulse a few times. Scrape sides and add all other wet ingredients. Pulse until a chunky paste forms.

Add back in your dry mix and pulse until all incorporated into a “dough” like mixture. Dont overpulse. Pour back into bowl and stir in shredded carrot. .
Roll about 2 tbsp of dough into a ball and place on a parchment lined baking sheet. Repeat until done. Roll in coconut shreds & top with buttercream icing.

Let chill in fridge for about an hour!


I n g r e d i e n t s 
1 1/2 cup cashews (soaked for minimum 5 hours, then drained)
1/2 cup full fat coconut milk
1/4 cup desiccated coconut
1/4 cup melted coconut oil
2 tbsp fresh lemon juice
2-3 tbsp maple syrup (preference)

D i r e c t i o n s 
Add all ingredients into a blender & blend until smooth. Taste and adjust! Pour in container & Allow to "set" in fridge for 3 hrs. minimum.
