CHOCOLATE PEANUT BUTTER (black bean....shhh ) BROWNIE BITES

 

Before I lose you with the black beans, just hear me out. If you can add an extra nutritious punch to dessert without ever tasting it, why the heck not???

Oh and also...THESE BROWNIE BITES ARE AMAZING. You would absolutely never know the black beans snuck in there. Still not convinced? I have taste testers to prove It. 

Good luck even getting the mix into the muffin pan bc this batter will have you licking the bowl clean. Perks of baking with no eggs! 

I n g r e d i e n t s 
12 dates (soaked in hot water for 10 min)
2.5 tbsp almond milk
2 tsp vanilla
1 tbsp room temp coffee ( optional to enhance flavor-- add an extra tbsp almond milk if not )
2 tbsp melted coconut oil
1/3 cup Peanut/ nut butter ( also extra for drizzling) .
1 15oz. can **no salt added** black beans ( rinsed, drained, pat dried)
2 flax eggs ( 2 tbsp flax meal + 4 tbsp water )
1/2 cup cacao powder
1/2 tbsp Flax meal ( in addition to the above)
3 tbsp coconut sugar
1/2 tsp sea salt
1.5 tsp baking powder
vegan chocolate chips for topping ( opt)

 

D i r e c t i o n s 
Preheat your oven to 350 F + Spray or rub down your muffin pan with coconut oil to prevent sticking. .
Prepare your flax eggs in a small bowl, set aside. After you soak your dates in hot water, remove the pits. Add dates to a food processor. Add your almond milk, vanilla, coffee ( or extra almond milk), melted coconut oil, and peanut butter. Process the mixture until smooth, almost like a paste. Scrape down sides as needed-- about 5 minutes until smooth. .
Add your black beans, and continue to process, scraping down sides as needed, another 5 minutes. You want your mixture without clumps! .
From here add in all other ingredients EXCEPT chocolate chips. Continue to process until once again smooth -- your mixture should be thick, but if too thick add a splash more almond milk. .
Scoop your mixture into each muffin mold, filling each about halfway. Drizzle extra peanut butter over the top of each brownie and swirl into the top. Press into the tops as many chocolate chips as you please!

Bake in the oven 25-30 min until done!
