

I made these little bites to solve all my overly exhausted postpartum problems.
They are created from ingredients that will sustain me when Im down and out but also look forward to grabbing every morning ( afternoon and night.)
These are absolutely delicious and packed with the good stuff for energy, for breastfeeding, for fueling the body, etc.
I have eaten these pre-workout, I have crumbled them over yogurt bowls, I have eaten in the car on-the-go.... but the result is always the same. They get the job done!
Ingredients
1/2 cup slivered almonds
1/2 cup sprouted pumpkin seeds ( I used salted, but you can use raw)
1/3 cup gluten-free sprouted oats
1/3 cup raw cashews
1/4 cup hemp seeds
1 tsp cinnamon
1/4 tsp Himalayan sea salt ( adjust accordingly to any salted nuts)
1/2 tsp vanilla extract
10-12 dates (depending on size)
Soak your dates covered in a bowl of hot water while you prep your balls. Set aside.
Add almonds, pumpkin seeds, cashews, oats, hemp seeds, cinnamon and sea salt to a food processor and pulse for 20 seconds to begin to break up your mixture.
Drain your dates (dont dry them, the extra moisture helps) and make sure no date pits are still in the middle.
Add dates and vanilla to the food processor and pulse for another 45 seconds.
You want the mixture slightly sticky and dates broken up into tiny bits. If not there yet, pulse another 30 seconds.
Try to roll a ball with your mix, if holds well continue rolling, if you need a little more stick, add 1 tbsp of HOT water and pulse again another 30 seconds.
Place rolled balls onto a lined baking sheet or container and refrigerate for extra firmness.
Store in the fridge or freezer!
