This might be ( is ) my favorite dressing/sauce I have ever made & I most definitely did a little dance when I nailed this recipe.
When detoxing salad dressing can be your sneaky little downfall, so I wanted to save the day & give you something you can make a big batch of and add to anything!
For those who know my obsession, you know that this was an attempt to ease my cravings of Sweetgreens dressing that I well, lets just say I consumed more of than you need to know. But FINALLY I can consume vats in the comfort of my own home!! And so can you
D r e s s i n g I n g r e d i e n t s
1/3 cup + 1 tbsp cashew butter
1 tbsp toasted sesame oil ( Trader joes has a great one)
2 tbsp grapeseed or avocado oil
2 tbsp rice vinegar
Juice of 1 small lime
1 tsp ginger, grated
1 tbsp fresh cilantro, diced ( more to taste)
1 small clove garlic, minced
1/2 tsp - 1 tsp red pepper flakes (spicy preference)
2 tsp raw honey
3-4 tbsp warm water to thin
1/2 tsp salt
D i r e c t i o n s
Add all ingredients to a food processor or blender , and blend until desired consistency. Taste and adjust!
S a l a d I n g r e d i e n t s
3 cups Chopped Lacinto Kale + Romaine mix
1/2 cup steamed yellow + red beet, peeled & then diced
1 cup steamed broccoli florets, mixed with fresh lemon, salt & pepper
1/2 cup chickpeas
1 sweet potato, cubed , mixed with EVOO + salt & pepper, roasted on 375 until tender.

Prepare all ingredients, add to a large mixing bowl, add desired amount of dressing!
