Tuscan Pasta Salad
Trust me, this Tuscan Pasta Salad will be a crowd pleaser at any summer potluck spread, and even better, it is as easy as It gets! By time your pasta is done boiling, its all ready to go!
So much flavor from the sun-dried tomatoes, black olives, fresh spinach and herb dressing!

1 12oz box brown rice pasta
3 cups fresh spinach
1 small green pepper, diced
1 small yellow pepper, diced
1 small cucumber, diced
3/4 cup sundried tomatoes, sliced
1.5 cup black olives, sliced
1/2 cup vegan mozzarella, cut into cubes
1/2 large red onion, sliced into thin strips or diced
1/3 cup olive oil
3 tbsp white wine vinegar
1 tbsp lemon
2.5 tsp italian seasoning
1.5 tsp raw honey or 1 tsp raw sugar
1 tsp sea salt ( you will need more salt once dressing the pasta salad)
1/2 tsp pepper ( you will need more pepper once dressing the pasta salad)
Add your pasta to boiling water and cook according to directions. While boiling add all your remaining pasta salad ingredients into a large mixing bowl ( from spinach - red onion ).
Drain your pasta when ready and allow to cool.
Whisk together all your dressing ingredients. Pour desired amount over pasta salad ( start with half of your dressing ) mix well , taste and adjust amount of dressing, salt ( I added more ) , pepper , etc!
I sprinkled more italian seasoning into my mixed pasta as well for extra flavor.
