VEGAN CARAMEL SAUCE

Allow me to introduce you to my new favorite food group....


VEGAN CARAMEL.

*excuse me while I drizzle this on everything*

Yall know I dont throw this around lightly, but this Caramel tastes like the REAL THING.

Drizzle It over fresh fruit, ice cream, oatmeal, yogurt , your salads... Ok maybe Im getting carried away, but maybe not.

Point is, you need this Caramel in your fridge. Do you want to know the best part? This requires 4 ingredients and its incredibly easy to make.

I n g r e d i e n t s

1/4 cup coconut butter

1 full fat can coconut milk 

1 tbsp cashew or almond butter

3/4 cup coconut sugar 

1/4 tsp sea salt 

1 tsp vanilla extract

Brought to simmer, stirring until starts simmering. And then every 5 minutes after that- it will reduce in volume after that! 50% 

Add first 4 ingredients into a small sauce pot and turn burner to low-medium heat

Whisk mixture until coconut butter is melted and all ingredients are incorporated. 

Continue to whisk as the mixture comes to a strong simmer, and then for the first few minutes at a simmer. 

After the first few minutes, you can whisk every 6-8 minutes. Repeat for about 25-30 minutes. 

The mixture should reduce in volume by about half. Once the color turns to a deep caramel color and volume has reduced, turn off burner and stir in your vanilla. 

Allow to slightly cool then transfer to a container. Let the caramel set in the fridge for a few hours uncovered. It will get even thicker! 

Store in a sealed tight container in your fridge!
