I feel wrong even calling this dish a salad. Though salads are one of my favorite food groups, this dish deserves a category of its own.

Coconut bacon might be my new star for topping off salads, grain bowls, or for just plain snacking.

And don't get me started on the dressing, I want It on every salad, every day, for the rest of my salad eating life. You think Im kidding. Wait until you try It!.


C o c o n u t   B a c o n  I n g r e d i e n t s  
2 cups coconut flakes ( not shredded)
1 tbsp avocado oil ( olive oil fine)
1.5 tbsp GF Tamari
1 tsp chipotle powder
1.5 tsp paprika
1.5 - 2 tbsp maple syrup
1/2 tsp himalayan sea salt
few shakes garlic powder

D i r e c t i o n s 
Preheat your oven to 300F. Line a large baking sheet with parchment paper. In a large bowl add your coconut flakes. Add all your ingredients into the bowl and massage everything into the coconut shreds. You want to make sure the spices are evenly coated on the coconut and worked in! 

Spread your coconut onto the parchment paper. Bake for 18-25 minutes, stirring coconut halfway through. When finished coconut should have a deep brown "glaze" color and have started to crisp up around the edges. The coconut will completely crisp up after cooling


L e m o n   P o p p y   S e e d   D r e s s i n g   I n g r e d i e n t s 
3/4 cup cashews (measured dry) , soaked for min. 4 hours
3/4 cup water
1/4 cup almond milk
2 tbsp lemon juice
zest of 1/2 lemon
1 tbsp dijon mustard
1 tbsp good quality honey
1/2 tsp sea salt
1 tbsp poppy seeds .
Drain and rinse your cashews. Add all ingredients EXCEPT poppy seeds into the blender. Blend until smooth. Taste and adjust any flavor you need. Pour into a large mason jar or container, add your poppy seeds and stir or 'shake' to incorporate In.


S a l a d   I n g r e d i e n t s 
3 cups butter or romaine lettuce
1 cup cherry tomatoes, halved
1 cup cucumbers, chopped
1/2 - 1 avocado , sliced

Add all your salad ingredients into a large bowl, except avocado. Pour desired amount of dressing. Mix well. Top with desired amount of coconut bacon + avocado. Dig in!
