The 'Jennifer Aniston' Salad

I am WAY behind on the 'Jennifer Aniston salad' trend that swept TikTok a few months back, but I knew I'd get to It eventually. It finally landed on my weekly priority list ( I blame two babies ) when my mom was in town and I am so glad It did. I swear I will make this one once a week!

I swapped out some ingredients, added a few as well, and let me just say ... I now understand the hype. 

It is simple, light, and refreshing while also satisfying and comforting ... which is saying a lot for a salad. 

This would be the BEST meal prep recipe and you could add the dressing ( which is just EVOO + lemon + sea salt ) as you go throughout the week. 

I highly recommend trying It with farro, but if you have a gluten allergy quinoa would work great! 

Throw It all in a bowl and call It a day! 

Ingredients 

2 cups cooked farro / quinoa / barley 

1 large cucumber, diced

1 cup chickpeas ( optional ) 

1/2 large red onion, diced

1/2 - 3/4 cup vegan feta, crumbled  ( amount based preference ) 

1 bunch radish, diced 

1 cup parsley, diced 

1/2 cup mint, diced 

1/2 cup pistachios, rough chopped

1/2 tsp sea salt ( more to taste ) 

2 tbsp olive oil ( more to taste )

1 large lemon ( more to taste ) 

 

 

Add all your ingredients to a large bowl. Drizzle on your olive oil and add your lemon juice and sea salt. Mix well. Taste and adjust flavors according to preference!
