MINT CHOC-CHIP SMOOTHIE

 

Do you want to eat ice cream for lunch? Perhaps with some chocolate chip crunch? Maybe you’d rather sip on a super creamy milkshake with sweet mint undertones?

Well, my friends, I do too. Spoon or straw, it wont matter, you will be making this on repeat! 


As life has gotten a little more hectic, simple, has been my "go-to"— so having this smoothie (pretty much) ready-to-go in the freezer has been a life saver.

You know the drill .

I n g r e d i e n t s

1/2 frozen banana
1 cup sliced zucchini, steamed & frozen
2-3 frozen coconut cubes. (I blend & freeze a full fat  can coconut milk into an ice tray )
1 medjool date 
1/2 tsp peppermint extract. (Flavorganics is my favorite brand ) 
1 tbsp cashew butter  (optional )
Almond milk  ( amount varies based on thickness preference) 
2 full tbsp cacao nibs


Optional Toppings: My granola & one Blender Bomb crumbled on top or blended in! If you use peppermint flavor the extract amount may vary!

 

D i r e c t i o n s

Add all your ingredients *except* cacao nibs into your blender and blend away, scraping down the sides and adding more liquid as needed!


Once blended pulse in your cacao nibs so that they are incorporated but still in "nib" form. 

I prefer my smoothies super creamy so I add a little liquid at a time and blend until I reach desired consistency. 

Tip: If have trouble blending, add a dash of hot water, stir and try again!
