Roasted Cabbage, Kale, & Quinoa Salad

I’m all about warm salads over here, they are incredibly hearty and satisfying while also delivering a nutritious punch! 

This one is topped with toasted quinoa, toasted hemp seeds, and caramelized red onion… so you get the perfect (think bread crumbs) crunch on top of your greens.

This dish would be a delicious addition to your holiday spread and will add such a nice pop of color. 

 

Equipment 

2 large baking sheets

Oven 

 

Ingredients 

1 bunch lacinato kale, rinsed and destemmed 

1 small head of green cabbage 

1.5 cups cooked quinoa 

1/2 cup hemp seeds 

1 small red onion, thinly sliced 

Olive oil as needed

1 tbsp lemon juice 

1 tsp honey

1 tsp red pepper flakes ( optional ) 

Salt and pepper as needed 

 

Preheat the oven to 450F. Line your two baking sheets with parchment paper. 

Remove the hard care from your cabbage and slice the remainder into thin strips. Spread out onto one baking sheet. Drizzle with 1 tbsp olive oil and season with a few pinches of salt and pepper. 

Place the baking sheet in the oven for 18-20 minutes or until golden and slightly crisp. 

Thinly slice your kale. Place on the other baking sheet and drizzle with 1 tbsp olive oil and season with a few pinches of salt and pepper. 

When your cabbage has 6 minutes left, add your kale into the oven. Kale will have turned vibrant green and softened a good bit. 

When ready, remove both trays from the oven. Allow to slightly cool and then add to your large salad or serving bowl. 

Turn the oven to 400F. 

Add your quinoa and hemp seeds directly to one side of a baking sheet. No parchment paper is needed. Drizzle on a little olive oil and season with salt and pepper. Spread in an even layer on one side of your baking sheet. 

Mix your red onion slices with a dash of olive oil and salt and pepper. Spread out on the other side of the same baking sheet. 

Bake for 10 minutes, stir both sides, and bake for another 10 or until your quinoa is golden and looking toasted. 

Remove from oven and pour onto your greens. 

Add your lemon, honey, red pepper flakes, salt, and pepper if needed, and mix well. Taste and adjust any seasonings you need.
