STRAWBERRY JAM CRUMBLE BARS W/ A PIE CRUST

These bars are my new JAM. Sorry couldn't help It. 

Is there anything more "summer" than fresh strawberries? Than fresh strawberries slow cooked into a sweet jam? Than fresh strawberries slow cooked into a sweet jam then turned into strawberry pie crumble bars? I THINK NOT.

Go ahead and add these to the must make list yall. They are equally as perfect as pie, and yet none of the hassle. I THINK YES.

Dont even get me started on that shortbread crust. I THINK ABSOLUTELY.

Cant wait for you to get your hands on one!
 
I n g r e d i e n t s
STRAWBERRY JAM
(You can also use 1.5 cup store-bought strawberry jam for the bars )
4 cups fresh strawberries, rinsed,& hulled  (you can use the linked method to help explain  "hulling") 
1/4 cup raw honey
3 tbsp fresh lemon juice  
1/4 tsp sea salt 

Once prepped, add your strawberries to a pot. Mash them with a potato masher or the bottom of a cup to release some of their natural juices. Add your honey and heat over medium high.

Bring the mix to a high simmer , stirring every now and then, until the mixture really thickens.This whole process took about 35-45 minutes.

Once It has really thickened, turn off burner and stir in your lemon juice and sea salt. Allow the jam to completely cool and then transfer to an airtight container. It will continue to thicken in fridge!

CRUST 
2.5 cups almonds flour 
1/4 cup applesauce 
1/4 cup ghee or coconut oil  
2 tbsp honey 
1/2 tsp vanilla
1/4 tsp pink sea salt .
Preheat oven to 350. In a small bowl mix all of your ingredients until a dough has formed. Add your dough to a parchment lined 9X9 inch baking dish. Set aside.
 
CRUMBLE 
1/3 cup almond meal 
1/2 cup finely shredded coconut 
1 tbsp tapioca flour 
Pinch sea salt 
2 tbsp honey, in liquid form 
2 tbsp ghee or coconut oil , melted.

DIRECTIONS
Line a 9x9 baking dish with parchment paper and preheat oven to 350F.
Mix your applesauce, ghee, honey, and vanilla in a mixing bowl. Whisk until combined. Now fold in your almond flour and mix until a dough forms. Using your hands, press the dough into the baking dish to form the crust.

Spread an even layer of your jam on top of the crust. Set aside while you prepare your crumble.
 
For the crumble: Quick rinse and dry the bowl you used for your crust. Now add the almond meal, coconut, tapioca flour , and sea salt into the bowl and mix. Slowly add and stir in melted honey & ghee with a fork so that the mixture stays crumbly and never overly “wet.” If too wet add a tad more almond meal. 

Sprinkle your crumble all over the top of the filling.

Bake in oven for 22-25 minutes or until the crust & crumble begins to turn golden brown! Remove from oven and let cool COMPLETELY before slicing. Store in fridge in a sealed container.
