Superfood Salad

Something most people struggle with in their daily diet habits is variety! It is hard to break out of routine but I promise this superfood salad is the place to start. 

It is loaded with nourishing ingredients like protein packed lentils and edamame, antioxidant boosters like kale, pomegranate seeds, and dates. Healthy fats like walnuts and olive oil ... the list goes on. 

Above everything else you will enjoy the complex flavors and delicious crunch! 

 

 

Superfood Salad

1 cup cooked brown or green lentils 
1 cup cooked brown rice 
1 bunch kale, de-stemmed & finely chopped 
1 large carrot, diced or shredded 
1 cup cooked edamame 
1/2 cup pomegranate seeds ( fresh or dried blueberries work here too!) 
1/2 small red onion, diced ( about 1/3 cup ) 
4-5 medjool dates, pit removed & rough chopped 
1/2 cup walnuts or pumpkin seeds, rough chopped 
1/4 cup sesame seeds 

 

 

Maple Vinaigrette 

1/3 cup extra virgin olive oil
¼ cup apple cider vinegar
2 tbsp maple syrup 
1 tbsp fresh lemon juice 
1 tablespoons spicy brown mustard
1/2 teaspoon himalayan sea salt
pinch ground black pepper
Add all salad ingredients to a large bowl. Toss well. 
Mix dressing ingredients in a small bowl or mason jar and whisk together. Taste and adjust salt. 
Toss salad with desired amount of dressing and add a few more pinches sea salt and pepper. Taste and adjust! 
Salad will be at its best, 30 minutes - 1 hour after dressing. Store in the refrigerator in a sealed container.
